I first discovered Mamachau’s baos at Fork On The Road and I’ve been in love ever since. There was always a long line up at their food stand so I was delighted when they opened up a permanent store in the CBD. Now I was able to get my bao fix anytime I wanted.
Mamachau were the first to bring baos to Adelaide. I’ve been to a few places that make baos and never really liked them. Other places were always dense and stodgy. Mamachau make the best baos in Adelaide. They are the lightest, fluffiest, pillowy soft baos with various flavour combinations.
Master stock pork belly cooked over a low heat for a long period of time. The meat was so tender and had absorbed all the flavours of the master stock. The layer of fat was so soft and luscious. My ultimate favourite bao I have to order every time.
The Korean fried chicken was succulent and moist with a crispy and crunchy batter and asian style coleslaw with creamy kimchi mayonnaise. I don’t know how they make the batter so crunchy but it is so good! Another favourite of mine.
This was my first time ordering the teriyaki eel and it was deliciously sticky and sweet. The pickled ginger and fresh crunchy cucumber balanced it out nicely.
I found the tofu bao quite bland. It definitely needed more seasoning but the texture of the tofu was nice. Crispy on the outside and silky on the inside.
They also serve rice bowls and healthy salads if you’re wanting something more filling.
I stand by what I say. Mamachau still make the best baos in Adelaide. The only downside is they’re only open Monday to Friday which can be hard for people who don’t work in the city.
